What kind of cuts can you get from a whole lamb? Here are the different carcass type you can order from your butcher or from us.

Whole lamb, Half lamb, Whole mutton
LEGS: 1. Whole, bone in 2. Cut in half for roasts 3. Chops 4. Ground or sausage 5. StewMeat
LOIN: 1. Chops 2. Roast 3. Ground or Sausage
SHOULDERS: 1. Roast 2. Chops 3. Ground or sausage
SHANKS: 1. Cut crosswise, bone-in 2. Whole 3. Ground or sausage
RIBS: 1. Short ribs 2. Ground or Sausage
TRIMMINGS: 1. Ground or Sausage Breast, flank and any trimmings, yields about 4 lbs. per whole lamb.
Also available are kidneys, liver, heart and ram fryers.
